BBQ Chicken Pizza {recipe}

Years ago I fell in love with California Pizza Kitchen's, BBQ Chicken Pizza....oh and their Thai Chicken Pizza (but that's another post). Seriously it is yum. Just yum. And it is super easy to make at home. And it looks like you spent a lot of time on it. Wanna make it? Good. Here's my recipe.
BBQ Chicken Pizza

Cornmeal
1 cup BBQ Sauce (your favorite kind)
1 large chicken breast, seasoned with salt and pepper, cooked and thinly sliced
1/4 red onion, also thinly sliced
2 cups shredded Mozarrella cheese
Handful of cilantro leaves, torn

Make a batch of Simple Pizza Dough
Spray your baking sheet with cooking spray and sprinkle it with a light layer of cornmeal to cover.  
Take 1/2 of the dough and pull/stretch/flip it in the air (just don't drop it on the floor!) to fit your pan. (Freeze the other half of the dough for another time!)
Spread out a thin layer of BBQ sauce all over the dough. Lay the chicken on top in a single layer. Top with the onion slices and sprinkle the Mozarrella cheese on top.
Bake at 500° for 15 minutes.
Top with the cilantro leaves and serve!

Easy peasy and you look like a gourmet cook too!
