Why is he amazing today? Because he made a fan-tastic dinner tonight.
He never follows a recipe, he just "creates" something and 9 times out of 10 it is yummy.
Here is his Lite Grilled Chicken Caesar Salad:

Lite Grilled Chicken Caesar Salad
3 - Romaine Hearts, chopped
4 - Green Onions, chopped
Pepper
4 - Thin, Boneless, Skinless Chicken Breasts
Mrs. Dash Garlic & Herb Seasoning
Pepper
Marzetti Simply Dressed & Light - Light Caesar Dressing
Directions:
Grill chicken breasts seasoned liberally with Mrs. Dash and pepper.
Slice chicken in thin slices.
Place the romaine hearts and green onions in a bowl and season with pepper.
Toss with (desired amount) of the Light Caesar Dressing.
Place salad on each plate and top with chicken. Serve and enjoy a very yummy, low calorie & healthy dinner!
My plate above (plus 2 tablespoons of the dressing) was only 297 calories (per MyFitnessPal).
