Carrot Cake Cookies {recipe}

Yesterday I said that we made some new yummies.
Well here they are.

Gigi (my mom) had given Payton this book awhile ago.

And now with Rylan's obsession with Elmo, it is his new favorite book.
He carries it around everywhere, finding Elmo in it, yelling his name and pointing to him {so cute!}.
So yesterday when we were "reading" it, I realized that we had everything to make these.

And I am glad that we did.  They were fun, easy and taste really good.

Carrot Cake Cookies
1½ cups flour
1 teaspoon cinnamon
½ teaspoon baking soda
½ teaspoon salt
¾ cup brown sugar, packed
½ cup butter (1 stick), softened
1 egg
½ teaspoon vanilla
1 cup grated carrots (approx. 2 medium)
½ cup chopped walnuts
½ raisins

In a small bowl, mix together the flour, cinnamon, baking soda and salt, set aside.
Beat together the brown sugar and butter until creamy.  Add the egg and vanilla; mix until well blended.
Stir in the flour mixture.  Add the carrots, walnuts and raisins and mix well.
Drop the dough by tablespoonfuls 2 inches apart onto a cookie sheet.

Bake for 12 minutes at 350 degrees, (just until the cookies are set). 

So because this has carrots, walnuts and raisins in it, does it make it healthy???
