Grandpa McNutt's Dutch Baby {recipe}

So, I have never had a Dutch Baby before.
I've had my grandpa's recipe tucked into my recipe binder for years, but have never tried it because I didn't/don't have a cast iron pan to bake it in. I recently saw a recipe that made it in a regular baking dish and thought I would give it a try. 
I'm bummed I've waited so long because it is so easy and so tasty. It's also relatively healthy. It has only 128 calories per serving and 5.5 grams of protein thanks to the eggs and milk. I'm always telling {my carb loving} kids they have to have SOME protein for breakfast each morning and this time it wasn't a battle. 
But then again, when you serve something with powdered sugar on it . . . any kid would gobble it up. {I'll be making a double batch next time!}
Grandpa McNutt's Dutch Baby
Serves 4

2 eggs
1/2 cup milk {I use 1% milk}
1/2 cup flour
1 tablespoon butter 

powdered sugar
lemon juice

Place butter in a 9" round baking dish {about 2" deep because it will puff up} and melt in the oven while its heating to 425°.

Beat eggs together with a mixer at high speed for one minute until light and airy. Slowly add milk and blend. Slowly add flour and beat one minute more.

Pull out baking dish and swirl butter around the bottom and sides of the dish.  Pour the mixture into baking dish and bake for 20-25 minutes. The center will puff up and the edges will turn golden brown.  Once you remove the dish from the oven the Dutch Baby will collapse. Slice, and serve topped with powdered sugar and lemon juice.
