This salad is full of a variety of yummy vegetables, but the mini sweet peppers are the star ingredient. We each topped it with a few different things (me - blue cheese crumbles & balsamic dressing, Chris - bacon bits and light ranch dressing). You can really customize this salad to your own taste, so here is the basic recipe. Enjoy!
Sweet Pepper Garden Salad
(serves approx 6 people)
2 Romaine hearts chopped
1 large carrot, peeled and sliced
5 green onions, chopped
2 Roma tomatoes, chopped
1 avocado, cubed
4 mini sweet peppers, halved (seeded) and sliced
Add ons:
bacon bits
blue cheese
homemade croutons
Dressing options:
light ranch
balsamic vinaigrette
blue cheese
