Week #38 {2015}

Sunday we had super yummy California Chicken Burgers and JalapeƱo Popper Bombs. Yeah, it was a-maz-ing.
I saw this online and it is SO very true. I'm now saying this on repeat at our home.
I think you can officially say that Rylan has the glider down pat.
Monday morning was late start for Dylan and we hung out on his bed,
watching this going on outside his window {at 6:30am!}
They were delivering our grass finally.
So our yard won't look like this anymore.
Rylan fell asleep in the car and I was able to transfer him to his bed.  He never naps anymore, so when he does, I'll take pictures.  =)
Tuesday I got to go and meet up with my Uncle Pete & Aunt Gayle who were in town.  It was so fun to catch up with them!
Then we walked all walked to get Payton from the bus stop.
Wednesday Chris had an awesome workout buddy.
Thursday was the first night we sat outside on our back porch and enjoyed a beautiful evening {while we were watering the lawn}.
We stayed out to see the sunset and the moon high in the sky.
Friday morning walking this beautiful ray of sunshine to the bus.
Papa and Yaya sent some fun mail to Rylan.  He loved it!
One of my favorite things happened on Saturday morning... Hot Air Balloons took flight behind our house and flew overhead.  We even got to talk to the people in the TN balloon.
The little ones and I got to hang out in Payton's Hello Kitty tent.
Then THIS happened!
We finished the day with a pretty rainbow peaking through the clouds.

And we {especially his daddy} are so stoked for him!
He had mastered his glider, so it took about 3 minutes for him to get the hang of the pedals and he was off.

Santa Fe Stew {recipe}

Saturday morning was FREEZING.  Our weather dropped about 20 degrees from Friday morning to Saturday morning and I had to put on pants and a hoodie.  {Low 70's is super cold when you've been used to 90 degree weather.}  It was cra-zy. Since it was feeling like Fall I pulled out an old recipe for Santa Fe Stew. It's been a few years since I last made and it and I forgot just how good and easy it is to make.  It's super filling and has a great little kick to it.  Want to try it?  Here's the recipe.
Santa Fe Stew
8 servings

1-1/2 pounds ground beef

1 onion, chopped
1 tablespoons taco seasoning
1-1/2 tablespoons ranch dressing mix
1 15 oz can whole kernel corn (undrained)
1 15.5 oz can pinto beans (or kidney beans), drained
2 10 oz cans Rotel tomatoes*
1 10 oz can diced tomatoes
1 8 oz can tomato sauce
2 cups water
2 cups noodles

Directions:
Brown ground beef with chopped onion and drain well.

Stir in taco seasoning and ranch dressing powder and mix well.

Add remaining ingredients, stir and cook 10 minutes (or how long the box of noodles says to cook).

Serve with sour cream and tortilla chips.


*note - Regular Rotel tomatoes can be hot.  If you prefer, you can purchase mild ones or sub out one of the cans of Rotel for another can of plain diced tomatoes.  I made this with regular Rotel Tomatoes, and although the kids kept saying "Ohhh this is spicy!", they kept on eating it! Ha!
