Muffins With Mom

Payton's school hosted "Muffins with Mom" this morning.
Payton had decorated her "table cloth" for me.

She is such a sweet little lady.

Here's a card she made me.

And the presents she made.
(The ladybug, bee and butterfly are her thumbprints.)

The teachers had asked Payton the following questions, and filled in the answers for her.

LOVE that she thinks I am 27 years old and the last one made me cry.
Her teacher said that she was crying as well when Payton answered it.
Then Payton showed me her class scrapbook.

The teachers brought in and made some really yummy food for us.
It was such a special morning!

Trader Joe's Black Bean, Corn & Lentil Dip {recipe}

The day that I bought the stuff to make Trader Joe's Lentil Bruschetta Dip (yum!),
my girlfriend (Kelly) purchased the things to make Trader Joe's Black Bean, Corn & Lentil Dip.
She said it was really good, so I had to try it for myself.
Here's all you need:

1 whole container of Black Bean & Corn Salsa
1/2 package of Steamed Lentils

Mix it together and you get this:

At first I ate it with tortilla chips, then I put about a half a cup into a tortilla, rolled it up and ate it for lunch.
It is really tasty and filling.
It had the perfect combination of flavor with a slight kick of spiciness.

Payton's Graduation From Pre-K

Payton's class had their graduation today!
(It was a little early, as they still are in school until the 21st.)
They sang a few adorable songs, then recited this poem which brought tears to my eyes.

Remember way back in the fall
when I was only just this tall?
Now look at me, I'm up to here
and my, I learned a lot this year.
In fact, you think I'm really great,
that's why I get to graduate!

Payton had the BEST teachers ever.
I am really sad that this year is done and we won't get to see them each day.
