Recent Happenings

Rylan LOVES Dylan so much.
These 2 helped me to (finally) hang Dylan's letters. His Papa made them for him when he was a tiny baby.
I copied my friend Alicia and made a bunch of Banana Chip Mini Muffins, bagged them and froze them for the kids to grab and snack on this summer.  (She made zucchini mini muffins, and mini pancakes, and chili, and chicken & rice soup - all prepped and frozen ready to go. She's superwoman like that!)
Nighttime snuggles are the best. I'm jealous . .  . of both of them.
I put together the end of the year gifts for the kids teacher. Thanks for sending me the idea from Pinterest Jeannine!
The tag says "Thanks for not being "impatient" with me this year and helping me grow . . ." Get it?

Hot air balloons flew right over our house (literally). Chris doesn't understand why I get so geeked out over them. They are just so neat to watch.(
Every time The Voice is on, Rylan breaks out into a dance party and tries to get everyone to join.
Rylan got some new "pee-pops" aka flip flops:
I love watching him run to his brother and sister (at the bus stop).
We see cardinals all the time here. This one looked a bit chubby!
We finally went from being a 1 car family to a 2 car family. Yippee!

Life

I'm pretty sure that I've lived in the South for a little bit too long . . . Seeing lawn mowers drive down the road don't seem to shock me anymore.
Tuesday, Ry and I got to go have lunch with Dylan for his 4th Grade End of the Year Picnic.
His request? Pizza from Costco. No joke.
Can you tell it was pretty hot outside?
We even got to drive with the sunroof open!
91°. That makes this California girl VERY happy.
While waiting to pick up Chris from work we checked out a new trail behind his office building.
Sweet boy grabbed my hand and we walked almost the whole way like this.
Yes my heart melted a bit.

God's creation is so very beautiful and perfect. Even when we call some of them "weeds".
He falls asleep in the funniest positions.
He's also talking in full sentences. He saw something of his and said, "Mine, I hab it pleeeeeease?". It was so cute!

Payton had "dress up like a pirate" day at school.
How does your 9-1/2 year old sit in the car?
Yes, this is EVERYDAY life for us . . . and I wouldn't trade it for the world.

Did I mention that we only have 2-1/2 more days of school? Yippee!

Buffalo Chicken Salad {recipe}

Since being diagnosed with Diabetes, Chris discovered (and fell in love with) Chili's Boneless Buffalo Chicken Salad. The whole salad is 55 carbs (which is what he needs to watch) and he orders it without the crispy tortilla strips - which makes it even less!

For Mother's Day, he decided to recreate it for us at home. It was delish!
Buffalo Chicken Salad
Toss:
Iceberg lettuce, chopped
White onion, chopped
Applewood smoked bacon, crumbled (we used bacon bit crumbles - it's what we already had in the pantry)
Blue cheese crumbles
Hidden Valley Ranch Dressing

Top With:
Breaded chicken tenderloins (baked and tossed in Scott's Buffalo Wing Sauce)
Pico de Gallo (Chris made his from scratch)

Drizzle With:
Hidden Valley Ranch Spicy Dressing
